Dinner, Dining and Dessert1: Chicken & Brownies
So, I've been planning for all my projects…putting them on calendars so as to make sure I meet my deadlines, checking to see what supplies I have and then making lists* «2 lists: groceries and craft supplies» of things to buy.
*I've been using Google Keep-which I am loving
But somehow I managed to miss the fact that I didn't have any baking powder. So, as I was prepping to make the brownies, I realized my mistake.
Luckily, I have some great neighbors. So, they got some brownies last night as payment baking powder.
But let's start with the entre…
Soy sauce
Peaches
Italian dressing
You can't tell me that the thought of those three together doesn't sound like a recipe for the trashcan?
But…I have to say: it was excellent!
Even hubby liked it and he isn't a 'sweet meat' fan «chicken & peaches=sweet meat»
And the perfect bite= a bite of chicken and a bite of peach together.
This will be in rotation at my house. But I do need to remember that it requires some prep work «letting the chicken marinate in the soy sauce for at least 3 hours».
We had it ours with a side of quinoa and I would have done asparagus had I not forgotten to make it.
Salt
Lemon pepper or black pepper I used only black pepper
1/3 cup soy sauce I used only low salt option
1 can (29 oz) cling peach halves, drained
1 cup bottled Italian salad dressing
Sprinkle chicken with salt and pepper. Arrange in glass baking dish. Pour soy sauce over chicken; cover. Refrigerate at least 3 hours or overnight. Turn occasionally. Heat oven to 350Âş. Arrange peach halves over and between chicken pieces. Pour salad dressing over chicken. Bake 45 mins
to 1 hr, or until chicken tender. Serve over hot rice, if desired.
Makes 4 to 6 servings.

And now dessert—which only I ate
And my girls wouldn't eat their dinner so…no dessert.
I did, however, have a friend over this morning to craft and I got her to eat one and give me her opinion and she concurred with me.
Good. Not super sweet. Cake-like.
I recommend trying them, and with ice cream.
1/4 cup butter or margarine
3/4 cup brown sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup finely grated carrots (3 or 4)
Preheat oven to 350¤. Melt butter in saucepan, add sugar, stir until well blended. Remove from heat, beat in eggs. Sift together flour, baking powder, and salt. Beat flour mixture and carrots into butter, sugar and egg mixture. Pour into an 8×8×2 inch greased pan. Bake for 30 minutes. Cut into squares while slightly warm.

Apparently my husband doesn't like brownies…he likes donuts and cookies and cake, but not brownies.And my girls wouldn't eat their dinner so…no dessert.
