This week I was able to make the meatloaf, but not able to do the cookies. But I am hoping to get them done Friday-perhaps with the help of the girls.
Barbecue Meatloaf with PeachesSo, the meatloaf…what to say? I thought it was EXCELLENT-minus the peaches. The peaches weren't bad or anything, they just didn't add anything and I wouldn't have though anything of it if they weren't there.
I really think the barbecue sauce added good flavor—and moisture. I thought it was a nice addition to
SIDE NOTE: One thing, when I was shopping I had to buy barbecue sauce…who knew there were SO many 'flavors' of sauce. Why is that necessary?
I served it with a medley of veggies.
2 pounds ground beef
1 cup bread crumbs
1 cup barbecue sauce (I used Hickory flavor)
1 tablespoon Worcestershire sauce
½ teaspoon salt
2 tablespoons chopped green onions
Heat oven to 350°F. Drain peaches; reserve ¼ cup syrup. In large bowl, mix ground beef, eggs, bread crumbs, barbecue sauce, Worcestershire sauce and salt. Spread into loaf pan, 9x5x3 inches. Bake 1 hour and 30 minutes. Drain off excess liquid. Arrange peach slices on top. Sprinkle with green onions. Pour reserved syrup over peaches. Return to oven. Bake 15 minutes longer or until meatloaf is cooked through and peaches are hot. Makes 6 to 8 servings.

Future modification: A modified meatloaf will go into my dinner rotation. Modifications will include, instead of 2lbs ground beef, I will do 1lb ground beef and then add 1-2 can(s) of black beans. I like to cut the meat portion for cost AND I'm always trying to get some more fiber into our diet. You can't really tell the difference when you add black beans and subtract some of the meat. I'd also not do the peaches or the green onions «they didn't add anything either and now I have a bunch in my fridge to go bad—I don't like to waste food»
